Manchego is perhaps the most well-loved and most famous of the Spanish artisan cheeses. Produced only in the La Mancha region of Spain, solely from the milk of the Manchega sheep breed.
Its distinctive flavour develops as the cheese matures to exhibit a creamy sharpness, with a lingering aftertaste of sheeps milk. Manchego acquires a caramel, nutty flavour.
Served with almonds and quince paste, we think Manchego is best paired with sherry, but also enriched by a glass of tempranillo or pinot grigio.
