Cold smoking is a traditional preserving technique practiced by the Harris Family for over 55 years. They only use the best fresh fish (much smoked fish is frozen) that is cured in a blend of salt and sugar to draw moisture from the flesh. The whole skinned fillets are then slowly cured over cooled smoke from oak to impart a subtle, even, smoky aroma. The fish are then further air cured to set the flesh. This method allows the character of the individual species shine through. The cold smoked salmon is darker, pleasantly oily while the lighter ocean trout is very rich with a slightly stronger flavour. A superior product that gives a touch of everyday luxury to breakfast, open sandwiches, platters and special occasions. 100 g
