Smoked Eggplant & Ricotta Saffron Tortellini
We smoked our eggplant slowly over an open flame, season and whip it into a light, delicate cream. We then combine this smooth, smoky mixture with fresh creamy ricotta to make our seductively smokey filling.
We then pipe this smokey filling into a vibrant saffron pasta dough. Our pasta dough is made with organic Molino Pasini 00 flour and Sanetti saffron sourced from Italy. Organic free-range eggs are sourced right here in Melbourne.
This limited-edition pasta is best served with a creamy butter and sage sauce and served with a decorative sprinkle of smoked paprika.
