Our Mortadella is made from only our Western Plains pork where method and technique achieve a product that has beautiful diamonds of back fat suspended in every slice. A spice mix of coriander seed, garlic and white pepper is carefully balanced with the right amount of whole black peppercorns flecked throughout.
This is a hand made product that would be a welcome addition to any Salumi or Charcuterie board or sliced thinly and draped over warm bruschetta to allow the fat to soften. It’s also delicious cut thick and served with a great pickle.
